Alyssa here. If you are like me, you look forward to squash season all year. I get my fix here and there by things like Costco's butternut squash ravioli which I was introduced to this year with brown butter, walnut, and cranberries... I'm drooling just thinking about it. Anyway, so I was looking for some new recipes for butternut squash and there were so many amazing possibilities that it took me 3 days to pick a recipe. I decided on the butternut squash lasagna with a creamy basil sauce and I must say it was out of this world delicious. You can be either a squash lover, or an on-the-fence occasional squash eater. You can even be a marginally squash-tolerant person and like this. I got my husband Ben to eat approximately two bites of this and considered that a success as he hates squash. Quite vehemently. I must reiterate how delicious this recipe was and everyone should try it while butternut squash is in season. I did have a few things that I think could make this recipe better. This was originally from the Food Network website and got five stars - and they were well-deserved stars.
My comments on the recipe: I don't think there would have been anywhere near enough squash if I had followed this recipe exactly. I used a large 5lb squash and I thought it was perfect. Keep in mind that I LOVE squash and if you're one of those on-the-fence, tolerant types, maybe you should use the original amount. It could have used more sauce and the squash was also impossible to blend/spread without adding some liquid, so I added some of the milk from the milk sauce, resulting in a less-saucy lasagna. Easy fix... add more milk.This is my version of the recipe:

Butternut Squash Lasagna
Cook time: 1:25 (2 hours if you roast your squash instead of steaming)
Level: Intermediate
Serves: 8-10
1 (1 1/2 to 2-pound) butternut squash, halved and seeded
Salt and freshly ground black pepper
3 amaretti cookies, crumbled**
1/4 cup butter
1/4 cup all-purpose flour
3 1/2 cups whole milk
Pinch nutmeg
3/4 cup (lightly packed) fresh basil leaves (I only had dried basil and didn’t feel particularly cheated)
1 pkg lasagna noodles, cooked al dente
2 1/2 cups shredded whole-milk mozzarella cheese (I used skim)
1 cup shredded parmesan
** Amaretti cookies: I am told these are easy to find at a specialty food store, world market, or a similar type of store, but I didn't have any and although I know it's not even close to the same things I happened to bake a batch of large sugar cookies so I crumbled 2 of those and added somewhere around 1/4 to 1/2tsp almond extract (go by taste). The subtle sweet almondy flavor makes this dish.
Directions
Two options for cooking the squash:
1. Peel the squash and chop into 1” cubes. Heat 1 tbsp oil in a heavy large skillet over medium-high heat. Add the squash and toss to coat. Sprinkle with salt and pepper. Pour 1/2c water into the skillet and then cover and simmer over medium heat until the squash is fork-tender, stirring occasionally, about 20 minutes.
2. Way tastier but more time consuming: Preheat oven to 400F. Place halves flesh side up on a baking sheet. Dot with butter and sea salt and roast 25 minutes or until fork-tender. (My squash was big so the roasting took almost an hour). I also put sliced clove garlic on mine… couldn’t help myself. It was delicious.
Cool the cooked squash slightly and then transfer the squash to a food processor, adding a proportional amount of milk for blending (~1/4c per pound). Add the amaretti cookies and blend until smooth. Season the squash puree, to taste, with more salt and pepper. (Seriously, taste it - it should taste good)
Melt the butter in a heavy medium-size saucepan over medium heat. Add the flour and whisk for 1 minute. Gradually whisk in the milk. Bring to a boil over medium-high heat. Reduce the heat to medium and simmer until the sauce thickens slightly, whisking often, about 5 minutes. Whisk in the nutmeg. Cool slightly. Transfer half of the sauce to a blender*. Add the basil and blend until smooth. Return the basil sauce to the sauce in the pan and stir to blend. Season the sauce with salt and pepper, to taste.
Position the rack in the center of the oven and preheat to 375 degrees F.
Lightly butter a 13 by 9 by 2-inch glass baking dish. Spread 3/4 cup of the sauce over the prepared baking dish. Arrange 3 lasagna noodles on the bottom of the pan. Spread 1/3 of the squash puree over the noodles. Sprinkle with 1/2 cup of mozzarella cheese and some parmesan (reserve ½ the parmesan for the top layer). Drizzle 1/2 cup of sauce over the noodles. Repeat layering 3 more times.
Tightly cover the baking dish with foil and bake the lasagna for 40 minutes. Sprinkle the remaining mozzarella and parmesan cheeses over the lasagna. Continue baking uncovered until the sauce bubbles and the top is golden, 15 minutes longer. Let the lasagna stand for 15 minutes before serving.
*When blending hot liquids: Remove liquid from the heat and allow to cool for at least 5 minutes. Transfer liquid to a blender or food processor and fill it no more than halfway. If using a blender, release one corner of the lid. This prevents the vacuum effect that creates heat explosions. Place a towel over the top of the machine, pulse a few times then process on high speed until smooth.
